What We Ate Wednesday 5/9/18

Geez….I tried really hard to get this to you on Wednesday, but had major computer glitches. I guess that’s what happens when you take zillions of pictures of your every meal and don’t delete any of them. Oops!

I know I’ve been delinquent in these posts for a couple weeks so sit tight and get ready for lots of meal ideas!

Spaghetti Sauce with Oven “Fried” Zucchini and Garlic Bread

Whole Roasted Chicken in the Instant Pot, Roasted Broccoli and Cauliflower and Smashed Potatoes (recipe coming – everybody loved these!)

Pork Roast with Mushroom Gravy, Roasted Fennel, Sautéed Zucchini and okra and Salad – this pork roast was good, but the gravy made mostly of cauliflower was only ok. Needs some tweaking.

Leftover stir-fried vegetables with Salmon Fillet – I just poured in a little Coconut Aminos and had a lovely Asian stir-fry

Balsamic Braised Short Ribs (from my favorite Practical Paleo) served over Mashed Cauliflower with Green Beans and Oven Fried Okra

Chicken Cordon Bleu with Roasted Vegetables

Roasted Sweet Potatoes with Eggs, tomatoes and avocado

Steak, Hot Dogs, Roasted Purple Cauliflower and Roasted Sweet Potatoes –This is what happens at the end of the week when the fridge is getting bare! Looks kind of strange, but it was a hearty meal with lots of veggies. Oh yeah, we had a green salad on the side as well. 

Lazy Girl’s Hamburger, Roasted Sweet Potatoes and Salad – So my hamburger was still frozen and I didn’t feel like trying to thaw it in order to make hamburger patties. I simply browned the beef in a skillet, added a sprinkle of salt, pepper and garlic powder and then poured in about a tablespoon of coconut aminos. I thought my kids would turn up their noses at this, but they loved it. Of course, I topped it with bacon, so what’s to complain about?

It’s Friday! It’s my anniversary and I have a date tonight with the best husband in the world! I hope your weekend is as lovely as I’m anticipating mine will be. 😃
