Ranch Chicken and Mushrooms

If you want a quick, tasty meal in a hurry, this Ranch Chicken and Mushrooms is perfect! You know we’re keeping things Paleo over here, so you can’t open a can of Cream of Mushroom soup or rip open a package of Ranch Seasoning, but with a little prep work, you can have all the ingredients on hand for a quick weeknight meal.

The bonus here is that the Cream of Mushroom soup that is a component of this dish is amazing on it’s own! Make it for a Saturday lunch and just set aside the two cups you need for this recipe.

I’ve made this as an Instant Pot recipe, but you can absolutely prepare this in your crock pot or even a dutch oven. For a crock pot, this is a 6 hours on low recipe. For a stove top to oven recipe, you need about an hour total.

Instructions
  1. Add oil to the Instant Pot and set to Sauté More.
  2. Clean chicken, sprinkle evenly with salt and pepper and add chicken pieces to the Instant Pot. Do not add all at once - just enough to cover the bottom of the pan. You will need to work in 2-3 batches. Cook until lightly browned on each side - 4-5 minutes total.
  3. Once the chicken is browned, remove to a dish and brown the rest of the chicken.
  4. Once all chicken has browned and removed from pan, add mushrooms and ranch seasoning and stir. Allow to cook until mushrooms begin to release their juices.
  5. Scrape the browned bits from the bottom of the pan. Add the mushroom soup and stir.
  6. Make sure you have scraped all the browned bits from the bottom of the pan. Now add back in the chicken and toss around to make sure the chicken is all coated in the soup mixture.
  7. Turn Instant Pot off, seal the lid, switch valve to sealing and set pot to High Pressure for 10 minutes.
  8. Once cook time is over, you can quick release or allow the pressure to come down on its own.
  9. Serve over cauliflower rice if desired.
