Heat a large oven-safe skillet over medium high heat. Add cooking oil.
Chop onion, celery and bell pepper into fairly small dice and add to oil. Sprinkle with a bit of salt and pepper and stir.
Cook vegetables, stirring occasionally, for 10 minutes.
Add ground beef. Break up beef with your spoon. Cook, stirring occasionally until beef is no longer pink.
Slice hotdogs into bite-sized pieces and add to ground beef mixture.
Allow this mixture to brown, cooking about 10 minutes more. See the brown bits on the bottom of the skillet? Wait for that to happen before you move on.
Add spices, aminos and tomato sauce. Stir until well-combined. Taste for seasoning and add more salt or pepper if desired. I suggest you hold back on the salt at the beginning because some hot dogs are extremely salty.
Place skillet in the oven and bake 12-15 minutes. Top with cheese, if desired. Bake an additional 3-4 minutes, just until cheese melts. Serve hot with lots of veggies!
