If you are following the autoimmune paleo diet, you can feel very limited in what you can eat. Back when I was still following AIP myself, I knew that I was going to need a tomato sauce substitute if I were going to make the diet work. Consequently, I created my Nomato Sauce. This sauce is so full of flavor that I actually prefer it to traditional tomato sauce.
If you are following AIP, you need to make a batch of that Nomato Sauce before you can make this Enchilada recipe. If you are not following AIP, you can use regular tomato sauce from a can.

I have titled this recipe Instant Pot Enchilada Chicken, rather than Chicken Enchiladas, because this recipe is simply for the chicken filling, What you do with the chicken is up to you!
- Eat it like soup
- Use it to top a baked sweet potato
- Make a batch of plantain chips and make nachos
- Make some AIP tortillas and roll the filling up like real enchiladas
