Honey Pecan Chicken

This is my family’s new favorite recipe!

Inspiration came from one of my favorite bloggers, Mix and Match Mama. I really only altered her recipe slightly by adding more chicken and a little sage and reducing the amount of honey.

You can use chicken thighs or chicken breasts, bone-in or boneless. You choose! My gang prefers thighs for their moist, tender and flavorful nature.

This recipe is easy enough for a week day, but special enough for all sorts of occasions. Best of all, it tastes amazing! You need this recipe in your repertoire! I recommend serving with something that will go well with any extra sauce. It was delicious on the cauliflower gnocchi and roasted broccoli!

Instructions
  1. Heat a large skillet, preferably cast iron, over medium high heat. Add ghee.
  2. Clean chicken, combine salt, pepper and sage, and sprinkle evenly over both sides of each piece of chicken. Preheat oven to 400 degrees.
  3. Brown each piece of chicken on each side, 2-3 minutes per side. Work in batches if necessary. I actually used two skillets and then as the chicken cooked and shrank a little, I was able to get it all in one skillet for the oven portion of the cooking.
  4. While chicken is browning, whisk together the honey and dijon. Once chicken is browned, pour this honey mixture evenly over the chicken.
  5. Place skillet in the oven and bake for 10 minutes (or transfer to an oven proof dish if your skillet is not oven proof).
  6. Remove skillet from oven, flip each piece of chicken over and sprinkle pecans evenly over top of chicken.
  7. Return pan to oven and bake for 15 more minutes.
  8. Pull the pan out and spoon the sauce over each piece of chicken. This just makes each piece moist and pretty!
  9. Dig in!
