Fresh and Simple Salmon Burgers

Are you ready to fire up your grill? Or at the very least, not be in the kitchen too long? If so, then these salmon burgers are perfect for you!

Simple, healthy ingredients, makes a simple, yet delicious, healthy meal.

I’ve made many a salmon or tuna patty in my day and I’ve finally discovered the secrets to keeping them moist and flavorful:

  1. Start with fresh (or frozen) uncooked fish
  2. Don’t overwork it
  3. Don’t overcook it

That’s it! What you add in for flavoring is really up to you. I prefer to keep it simple and let the fish flavor shine. If you happen to live with a fish hater, then maybe you need to add a few more herbs and spices to disguise the fish a little. Either way, this is a quick and simple recipe that is packed full of the Omega-3 Fatty Acids we all need more of.

And it will get you in and out of the kitchen fast. Just what these long, summer days call for!

Instructions
  1. Heat a medium skillet over medium high heat and add 1 Tbsp. oil. Add chopped veggies, a little sprinkle of salt and pepper and cook, stirring occasionally.
  2. Continue to cook for 8-10 minutes until slightly browned and soft. Remove from heat and set aside to cool.
  3. While veggies are cooking, prepare salmon by removing any bones, blotting dry (or squeezing out excess water if your salmon was frozen) and chopping into approximately 1/4 inch cubes. Add this to a mixing bowl.
  4. To mixing bowl, add egg, almond flour and remaining salt and pepper.
  5. Once vegetables have cooled enough that you can touch them with your bare hand, mix these into the salmon mixture.
  6. Mix thoroughly, but gently. Don't overmix. You just want everything combined.
  7. Heat remaining tablespoon of oil in a large skillet set over medium high heat. If the skillet is large enough, you can use the same one you cooked the vegetables in.
  8. Form salmon mixture into patties of your desired size (I use a spring-loaded scoop) and place in hot oil.
  9. Cook for 3-4 minutes per side, just until salmon is no longer translucent.
  10. Trust me, these don't take long to cook.
  11. Serve hot with sauce, if desired. These are great on a big bed of salad greens or you can make them burgers with
  12. To make sauce simply mix all ingredients well and refrigerate until ready to eat.
