Want to know what I eat probably more than anything? Cauliflower fried rice. It’s get me some veggies, some protein, some good fat and I love the taste. Plus it’s fast, easy and scalable. I can make this for one or four. But mostly I make it for only me.
This dish is not even remotely fancy – despite what this picture might convey with those very artfully arranged spinach leaves on top. But what it lacks in fanciness, it makes up for in taste, nutrition and ease.
You can add whatever greens or veggies you like (leftover roasted vegetables are great in this). You can add extra protein like a piece of salmon. Just follow the basic instructions and make it your own.
And yes, I eat this mostly as a breakfast or lunch dish, but it’s good anytime!
