My parade of Instant Pot recipes continues with these savory and comforting Turkey Stroganoff Meatballs. One of the most popular recipes on this site is my super fast AIP Ground Beef Stroganoff. I hear so often that people love this recipe, which makes me really happy. Doubting husbands love it, picky kids love it. This is such a simple and basic recipe, yet it’s really flavorful and quick and a big bonus is that it’s acceptable for the Autoimmune Protocol.
This turkey meatball version has the same savory flavors as the beef version, but somehow seems like a totally different recipe. I tried making it in the Instant Pot and it worked great. My family enjoyed this served with mashed cauliflower, but you could serve it over squash noodles, regular mashed potatoes or even serve it as soup. When I first made this dish, the broth/sauce was pretty thin. I added a slurry of arrowroot and water to thicken it to more of a gravy consistency, but this would be really yummy as soup! If you want to go that route, reduce the arrowroot in the recipe to 1 Tbsp. and make the meatballs smaller, like teaspoon rather than tablespoon size.
If you don’t have an Instant Pot, have no fear. You can make this on the stove top as well and it’s still quick enough for a weeknight dinner. I give instructions for both below.
Because you’re using ground turkey instead of beef, this is naturally lower in fat than the ground beef recipe, if you happen to be watching your fat intake.
