Turkey Stroganoff Meatballs (Instant Pot and Stove Top Options)

My parade of Instant Pot recipes continues with these savory and comforting Turkey Stroganoff Meatballs. One of the most popular recipes on this site is my super fast AIP Ground Beef Stroganoff. I hear so often that people love this recipe, which makes me really happy. Doubting husbands love it, picky kids love it. This is such a simple and basic recipe, yet it’s really flavorful and quick and a big bonus is that it’s acceptable for the Autoimmune Protocol.

This turkey meatball version has the same savory flavors as the beef version, but somehow seems like a totally different recipe. I tried making it in the Instant Pot and it worked great. My family enjoyed this served with mashed cauliflower, but you could serve it over squash noodles, regular mashed potatoes or even serve it as soup. When I first made this dish, the broth/sauce was pretty thin. I added a slurry of arrowroot and water to thicken it to more of a gravy consistency, but this would be really yummy as soup! If you want to go that route, reduce the arrowroot in the recipe to 1 Tbsp. and make the meatballs smaller, like teaspoon rather than tablespoon size.

If you don’t have an Instant Pot, have no fear. You can make this on the stove top as well and it’s still quick enough for a weeknight dinner. I give instructions for both below.

Because you’re using ground turkey instead of beef, this is naturally lower in fat than the ground beef recipe, if you happen to be watching your fat intake.

  1. In a large mixing bowl, combine caramelized onions, ground turkey, almond flour, egg, sage, milk, 3/4 tsp. salt and 1/4 tsp. pepper. Mix well and shape into meatballs about 1 Tablespoon in size.
  2. Heat a large nonstick skillet over medium high or set the Instant Pot to sauté and add cooking fat. Working in batches, brown each meatball on all sides. When one batch is browned, remove them to a plate and finish browning the rest. I made mine in the Instant Pot and had to do this in just two batches.
  3. While meatballs are browning, mix together: water, coconut cream, lemon juice, arrowroot, tomato paste, fish sauce, coconut aminos and paprika. You can do this by hand or use a blender or small food processor. Blend until smooth.
  4. Now add back the first batch of meatballs to the Instant Pot. Turn the pot off. Pour over the sauce. Add sliced mushrooms and sprigs of thyme. Set pot to 10 minutes at hight pressure. If using a pan on the stove, follow the same procedure, covering your pot with a lid, reduce heat to medium low and simmer for 15-20 minutes.
  5. Allow Instant Pot to depressurize naturally for 2-5 minutes, then quick release the rest of the pressure. Taste for seasoning and add addition salt and/or pepper if desired. Remove the sprigs of thyme and discard.
  6. Serve over mashed cauliflower, potatoes, zucchini noodles, rice or just eat it as is!

To make this a Trim Healthy Mama E meal, use lean ground turkey or chicken, substitute THM baking blend for the almond flour, and substitute fat free Greek yogurt for the coconut cream.
