Sweet Potato, Sausage and Kale Soup (Paleo and AIP)

When you’re in the mood for something warm and comforting, yet easy to throw together, look no further than this potato soup.

Made paleo with the use of white sweet potatoes rather than regular white potatoes and jazzed up with the addition of sausage, spicy or not-so-spicy, this meal is comfort through and through.

We had this for dinner on Halloween, a very hectic night between sports practice and trick-or-treating. I put this together in the middle of the afternoon and then everyone reheated their own serving when time allowed.

My husband enjoyed leftovers all week. If it gets a little thick for your taste, just thin with a little extra broth.

Most soups freeze very well, but potatoes are notoriously bad at freezing, so I wouldn’t recommend it in this case. But it will keep in the fridge well for the better part of a week.

Instructions
  1. Heat oil in a large dutch oven set over medium high heat. Chop shallots and celery. Add to pan with 1/2 tsp. of salt and 1/4 tsp. of black pepper. Cook for 10 minutes, stirring occasionally, until vegetables are slightly browned.
  2. While vegetables are cooking, peel and chop potatoes into equally sized chunks (the smaller you cut the potatoes, the faster they will cook).
  3. Add potatoes and broth. Add an additional 1/2 tsp. salt and 1/4 tsp. pepper. Heat to just boiling. Reduce heat and simmer for 20-30 minutes, until potatoes are very tender. Stir occasionally. While soup is cooking, brown the sausage in a separate skillet. Set aside until step four.
  4. Add kale, stir in and cook 5 minutes more. Using either an immersion blender or in batches with a regular blender, puree soup until smooth. Return to pot and stir in lemon juice. Add sausage. Adjust seasoning with salt and pepper. I recommend not adding too much salt and pepper until you've added your sausage because salt content varies widely with sausage.
Recipe Notes

*Regarding the potatoes, you can certainly use white potatoes in this recipe if you wish. There is some controversy as to whether they are "paleo" or not. If you eat potatoes with no problems and that's what you prefer, then go right ahead. You're the cook!

I, personally, like the flavor of white sweet potatoes. They're not as sweet as the typical orange variety. I usually find two different varieties at my local Whole Foods. You could use orange sweet  potatoes as well, but your soup will turn out a little sweeter.

To balance the sweetness, consider adding more black pepper or use a spicy sausage.
