Sweet Potato Fries

There are many recipes for baked sweet potato fries flying around on the internet and I’ve made many of them. We eat sweet potato fries about once a week around here, so I’ve had lots of opportunities for testing.

And I can tell you this: they all come out pretty much the same. I’ve tried soaking the potatoes, coating them in some sort of flour, baking at all different temperatures for different lengths of time. What I’ve discovered is that simple is best. And super tasty.

One great thing about this recipe is that the baking temperature is flexible. If you’re just baking your fries, with nothing else in the oven, 425 is the desired temperature. But if you happen to also have something else in the oven that needs to bake at 375, that’s ok too. Or you can bake at a higher temperature if something else requires it. They will take longer to bake at a lower temperature and will be done sooner if baked at a higher temperature. But you knew that already.

Bottom line: when you have a craving for french fries, make these! You’ll be glad you did.

Instructions
  1. Preheat oven to 425 degrees. Add fat to a large, rimmed baking sheet and place in oven while it preheats.
  2. Scrub potatoes well and slice into sticks. I like about 1/3 inch thick sticks. You can make them thicker or thinner to your taste, just try to be consistent. If you have some thick ones and some thin ones, they will not bake evenly. I prefer white sweet potatoes, but sometimes make a combo of orange and white just because they're pretty.
  3. Once oven is up to temperature, remove sheet pan, add potatoes to pan, sprinkle with about half the salt and pepper and toss to coat. Try to lay the fries out in a single layer. Bake 10 minutes.
  4. Flip each fry over, add remaining salt and pepper if desired, and bake 10 minutes more. If the fries are now done to your liking, take them out, they're done! If you want them a little more brown and/or crispy, leave them in for a few more minutes. Just keep an eye on them.
Recipe Notes

If you're in a hurry, after scrubbing the potatoes clean, prick each one with the tines of a fork a few times and microwave on high power for 2-3 minutes. You don't want to bake them all the way through, just give them a head start. Then proceed as directed above in step 2.
