Paleo Pumpkin Pancakes

Really simple, fast to put together, delicious and very low in carbohydrates (as long as you don’t drown them in syrup). This is perhaps the perfect food for paleo beginners. Add some bacon or sausage and fruit and you have an pretty balanced meal. Don’t forget your pancakes are made from pumpkin so that counts toward your fruit and veggie quota for the day. Hooray!

Instructions
  1. In medium sized mixing bowl, whisk eggs and pumpkin thoroughly.
  2. Add arrowroot, baking powder, cinnamon and salt and mix well.
  3. Heat large non-stick skillet over medium to medium high heat. Melt about a teaspoon of butter or oil and swirl to coat bottom of pan. When the oil is starting to bubble, add batter, about 1/4 cup per pancake. Cook for 2-3 minutes per side, just until browned, then flip. Cook 2-3 minutes more.
  4. Remove pancakes to a large cookie sheet and keep in a low oven (about 175 degrees) until all pancakes are cooked.
  5. Serve with real maple syrup or fresh berries.
