Salmon, or any fish for that matter, makes for a quick and healthy dinner on busy nights. Though, I confess that salmon is not my favorite fish. I just don’t love the taste, but I know it’s good for us so we try to eat it at least once a week.
I prefer my salmon marinated in something flavorful, but if you don’t have time to marinate, make the marinade and reduce it to use as a sauce only. It will still be delicious.
I’m so thankful that grilling weather is back. My goal this season is to teach my 11 year old to man the grill. My only beef with grilling is that I have to run back and forth between the inside cooking and the outside cooking. Kind of like right now as I’m in my office trying to write up this recipe and I keep forgetting that I have dinner cooking in the kitchen. Oops!
