Instant Pot Cauliflower Grits
A really, truly delicious adaptation of a super healthy vegetable.

  1. Clean cauliflower and chop into medium sized florets (see video for details).
  2. Add to the bowl of a food processor fitted with the mixing blade. Pulse until cauliflower is all finely chopped.
  3. Add to the Instant Pot, or bowl of other slow cooker.
  4. Now add all the rest of the ingredients except the glucomannan and water. You might want to add less salt and pepper to start and see if you need more later. For one medium sized head of cauliflower, I ended up using one full teaspoon of salt and 3/4 tsp. pepper.
  5. Mix gently.
  6. Place lid on Instant pot, make sure valve is set to “venting.”
  7. Press slow cook and adjust time to 5 hours. Walk away.
  8. If you’re home, feel free to remove the lid and stir and taste your grits throughout the cooking time.
  9. At the end of the cooking time, give your grits a stir and taste for seasoning. And make sure they are tender enough for your taste.
  10. Press cancel, then sauté and adjust to the less setting.
  11. Mix glucomannan and water and quickly stir into grits while they are bubbling.
  12. The grits are ready to serve right now, but they can also hang out here on sauté or keep warm for quite a while.
