Ok, so I remember way back to my cauliflower pizza crust post where I went on and on about my hatred of cauliflower. I will be the first to admit that I have misjudged this amazing vegetable.
First of all, it’s white, which means we can morph it into a lot of different dishes and keep picky eaters in the dark.
Secondly, it’s flavor isn’t exactly bland, but it’s neutral enough to lend itself to any number of applications.
And last but not least, it actually tastes ok. If you can eat it raw, it’s flavor is super mild. Dip it in something yummy and you might just find yourself mindlessly snacking. On a cruciferous vegetable!!! I think the earth just shook a little.
Alright, enough drama. This cauliflower grits recipe is just the latest triumph in the “turn cauliflower into something yummy” challenge that I have been internally playing.
Throw everything in a pot – Instant Pot, Crock Pot, regular, ordinary, stove top pot, whatever you’ve got! This recipe is very, very adaptable. I kept it pretty simple here, but you could totally dress this up and let the grits shine as a dish of their own. Me, I like them as a base for something saucey, like Jambalaya…
