Grilled Sweet Potatoes

When the day is hot and sticky, the last thing I want to do is turn on my oven, or even the stove. That’s when I turn to the grill for my entire dinner.

If we’re already grilling meat, why not grill the side dishes too! This recipe is super simple and adds a great new twist to sweet potatoes.

Instructions
  1. Start by pre-heating your gas grill on high. After about 5 minutes, scrape off any debris from your last grilling adventure. Turn grill down to medium.
  2. While grill is heating, lay out three pieces of aluminum foil about 18 inches long. Stack the foil on top of each other so your packet is three foil sheets thick.
  3. Smear the bacon fat along the middle of the foil. If you don't have reserved bacon fat, cut three slices of bacon into small pieces and sprinkle them along the middle of the foil.
  4. Slice onions and sweet potatoes into about 1/8 inch slices. You don't have to be super precise. Add a layer of onions, then a layer of sweet potatoes, salt and pepper and repeat until you've used up all your veggies.
  5. Gather up your foil and make sure you have it sealed up well. You want the steam to stay in.
  6. Place on grill and leave it alone for 15 minutes. After 15 minutes, rotate 90 degrees and leave for another 15 minutes. Carefully open the packet and test the doneness of the potatoes. If a fork or knife pierces the potatoes easily, they're done. Remove from the grill and serve piping hot.
