Fresh Cranberry Sauce

This is a take on my mom’s traditional cranberry sauce recipe. It’s much more than sauce though, it’s more like a fruit salad. Even my picky son loves this recipe. It can’t compete with the jellied stuff in a can (according to my husband) but if you want something fresh and with less sugar, this is a great recipe to try.

Instructions
  1. Combine cranberries, honey, maple syrup, orange zest and juice in heavy saucepan. Cook over medium to medium high heat, with lid on, for 15-20 minutes, until all the cranberries pop and mixture thickens.
  2. Combine gelatin powder and boiling water. Mix well until all gelatin dissolves. Set aside to cool slightly.
  3. Combine cranberry mixture, gelatin and all other ingredients and mix well.
  4. Cover and refrigerate until time to serve.
Recipe Notes

I make this the day before I'm going to serve it and it's even better once all the flavors have had a chance to meld.
